Spicy Masala Omelette
Spicy Masala Omelette is the perfect breakfast when you’re looking for something a little out of the ordinary. We love spicy so it goes anytime of the day or night.
My hubby is a huge Omelette fan, usually it’s tomato, onion, mushroom and loads of pineapple. Yes, pineapple! Who eats pineapple in an omelette…only my crazy hubby!

He could literally eat pineapple with everything. I’m just glad I don’t have to share his food, no thanks.
This Spicy Masala Omelette definitely has only the nice stuff in it, definitely not pineapple.
What goes into a Spicy Masala Omelette
It’s a few pantry staples, nothing you have to rush out to the shops to buy. All you need is eggs, tomato, onion, chilli, coriander, chilli powder, cumin and some cheese which is totally optional.
And of course, a little bit of butter to fry the omelette. Doesn’t butter just make everything better!
How do I make it?
You chop up all the ingredients that needs chopping. The egg is then beaten with a fork and mixed with the other ingredients.
You heat some butter and fry half of the mixture until it is a little crisp on the edges and perfectly cooked in the center. When you flip it over you can add some cheese if you wish or you can totally omit the cheese
Breakfast in a jiffy
This is so quick and easy to make. I must admit I am not a huge breakfast fan, the most I have for breakfast is muesli and yogurt, a smoothie or provita and cheese.
On the odd day I may have an egg but that’s not often. However, I did enjoy this omelette today. It was a good change from my boring breakfasts.

Spicy Masala Omelette
Ingredients
- 3 eggs beaten
- 1 tbsp butter
- 1 small onion finely chopped
- 1 small tomato diced
- 1 green chilli finely chopped
- 1 tsp chilli powder
- 1/2 tsp ground cumin
- 2 tbsp fresh coriander chopped
- salt
- pepper
- 1/2 cup grated cheddar or mozarella cheese (optional)
Instructions
- Beat the eggs and mix it with all the other ingredients, except the butter. Season with salt and pepper
- Heat the butter in a pan, add a few drops of oil to prevent burning
- Pour half the mixture into the pan and allow it to fry on medium heat until the edges are golden brown and crisp
- Flip it over and sprinkle some cheese on top
- Once the other side is cooked and slightly golden brown remove from the pan. Repeat with the other half of the mixture
- Garnish with some chilli and coriander and serve hot, with some bread rolls or toast if you prefer
Notes
- You can use any cheese of your choice or omit the cheese
- If you want a bigger omelette you can add an extra egg
- The spice can also be adjusted according to your preference
