I love Biryani and now that I don’t eat lamb it’s often a Vegetable Pilaf  (similar to a biryani) or of course a Chicken Biryani. I always try to find easy ways to cook especially if I am short on time. My days have been super busy so I tried to prep this Oven-Baked Chicken Biryani the night before and just popped it into the oven the next day. It was sublime. Biryanis can become a little complicated but this is a super easy way to cook any Biryani. I find that everything tastes better when cooked in the oven….

Did I tell you how much I love cheese…yes I love love cheese, as much as I love potatoes. Anything that has cheese as an ingredient I don’t think twice about making them. If only I could eat it everyday. I’m not really having anyone for a fancy dinner party but I think my husband is special enough to make him some treats every once in a while. Today is my little one’s birthday, well not so little anymore. I can’t believe how he’s grown, 11 years old today. So Dad’s taken a half day off to spend with him and of course mum has to have lunch ready. Not for the birthday boy but for the dad. He’s eating healthy again so I am not allowed to give him any carbs. So my quick and easy Tuna Avocado Egg Salad will have to do.
