I hope you all had an awesome weekend! The weekends go by far too quickly but I had an amazing weekend. My hubby and I celebrated our 12th wedding anniversary, can’t believe we celebrated 12 years together and we both still alive…..haha!
I’m just kidding, we do have our disagreements from time to time but we have a fairly peaceful relationship. We trust and respect each other and most of all communicate really well, he’s also a great dad and for me that’s important. Of late I have been reading many horror stories of women abuse and I can’t help but touch on this subject as it’s close to home for me.
It makes me appreciate the man I have in my life even more. He will never abuse me and respects me as a woman. I am also a survivor of abuse. I call myself a survivor because I never want to be seen as a victim. Yes I went through a traumatic, violent first marriage but I have overcome that.
Took me a long time to pluck up the courage to leave and to find myself again but I am stronger and wiser than I’ve ever been. As I celebrate 12 years with my hubby I also realise how lucky I am to be given a second chance and to be in a stable relationship.
If you are reading this and you are in an abusive relationship, just know that you can walk away. You can start afresh and there is always light at the end of the tunnel. Faith and Hope is all you need.
Now that I’ve got that off my chest I feel better. Let me share my Creamy Pesto Pasta Recipe. The simplest recipe you will ever make. Yes I did cheat, I used store bought pesto. It was still delicious though.
I love making things from scratch but there are days when I just don’t have the time or the patience. Today was one of those days. Thanks to store bought pesto we had a meal in 15 minutes. You can serve this pasta with a fresh green salad.
Remember I mentioned that I visited that Italian Deli a few days ago. I got some fresh pesto from them and it was perfect for this pasta dish. You are welcome to make your own. If you want some protein you can add some chicken to this Creamy Pesto Pasta.

Creamy Pesto Pasta
- 3 cups dried pasta I used Penne
- 250 gram or 1 cup basil pesto
- 1 cup fresh cream
- 1/4 cup grated parmesan
- few leaves of fresh basil
- Cook pasta as per package instructions with some salt. Once it's cooked, al dente, drain the water and set aside. Reserve a cup of water for later use
- Add the pesto and fresh cream to a pan and heat through
- Mix the pasta and pesto sauce together. Serve hot with a sprinkle of Parmesan cheese and some fresh basil
- Season with more salt and pepper if required
