Easy Cinnamon Rolls

I absolutely love baking, even though I may not eat everything I bake. Baking for me is the most therapeutic thing. It’s even better when my baked goods turn out perfectly, like these Easy Cinnamon Rolls.

These turned out so light and fluffy and gooey. I love them.

As they say third time lucky so after my third try I got perfect Cinnamon Rolls. Did I mention they are also egg-free, yes they are!

This recipe was on my list for a while. When I attempted it the first two times I always felt it lacked something or the texture wasn’t exactly right.

For now I think I am totally satisfied with the results. You should all know me and the low sugar by now but feel free to adjust the quantity of sugar as you wish.

Ingredients Required for this recipe:

For these cinnamon rolls you will require cake wheat flour or all purpose flour, yeast, sugar, salt, butter and milk.

This recipe has no eggs so those that don’t eat eggs can also enjoy it.

You can also use bread flour for this recipe, however I prefer to recommend ingredients that are easily at hand.

When using yeast always ensure it is fresh. It makes all the difference.

I prefer to use instant dry yeast. But you can use active yeast too if you prefer.

How to make the Cinnamon Rolls

The dough is really soft for these rolls, the way it should be. Although I do recommend a stand mixer you can also use your hands to make the dough.

It is a very soft dough so it will feel very sticky at first. Don’t be tempted to add flour, a little sprinkle is ok.

Oil your hands and knead the dough, it will feel less sticky. As you keep kneading the dough you will find that the dough will be less sticky.

It should take about 12 minutes to knead by hand and 8 minutes in a stand mixer. The dough will be smooth and silky and pull away from the sides of the bowl.

The dough needs to rest for an hour and again for 30 minutes. Always let your dough rest in a warm environment to allow it to rise.

I usually turn the oven on on the lowest setting just until it starts to warm a little. I turn it off and place my covered dough in the oven. It does speed up the process.

Cutting the dough with a piece of floss, yes the one you use for your teeth works best. A clean piece please and the one without any taste.

You can use a sugar glaze for the top, will give you a recipe for that in the notes. This time I did make a cream cheese frosting and it was so good.

You can refrigerate these rolls for up to 3 days in the refrigerator. Best to reheat the leftovers for a few seconds in the microwave before serving

Please let me know how it turns out if you do try my recipe. If you love working with yeast you can try more bread recipes:

Ingredients

Dough

  • 1&1/2 teaspoon instant dry yeast
  • 2 tbsp granulated sugar
  • 2 tbsp melted butter
  • 1/2 teaspoon of salt
  • 1 cup warm milk
  • 2&1/4 cups cake wheat flour

Filling

  • 1/3 cup brown sugar
  • 1&1/2 tbsp ground cinnamon
  • 1/4 cup butter room temperature

Cream Cheese Frosting

  • 1/2 cup cream cheese room temperature
  • 1/2 cup icing sugar
  • 2 tbsp butter room temperature
  • 1/2 teaspoon vanilla essence

Instructions

  • Add all the dry ingredients to a a mixing bowl or stand mixer. Mix the milk and butter together and slowly pour it in. Mix well
  • If you're using a stand mixer knead the dough for 8 minutes, 2 minutes on low speed and then on medium speed. If kneading by hand it should take about 10-12 minutes to knead. You should have a silky smooth dough
  • Grease a large bowl with more melted butter or vegetable oil and place the dough in the bowl. Cover with a tea towel or cling wrap and allow it to stand in a warm place until the dough rises. Will be double its size. Should take about 1-2 hours to rise
  • Mix the ingredients for the filling, the soft butter, cinnamon and brown sugar and set aside
  • After an hour preheat the oven to 180 degrees Celsius
  • Punch the dough down and roll out the dough, should be a rectangle of about 30cm x 30cm
  • Spread the filling over the dough using the back of a spoon or spatula
  • Roll the dough tightly. Gently pinch the seam down to seal it well. Trim the ends off and discard. Cut the dough into 11 equal pieces. Use a piece of dental floss to cut neat rounds
  • Arrange the rolls in a lightly greased or lined baking dish. A glass casserole or cast iron dish can also work. Leave some space in between each piece of dough to allow it to rise. Cover with a damp tea towel and allow it to rise for a further 30 minutes until it has doubled in size
  • Uncover rolls and bake for 20-25 minutes until golden brown
  • Soft Fluffy Chocolate Cinnamon Buns
Let it cool slightly (not completely) and spread the cream cheese frosting on top. Serve warm

Cream Cheese Frosting

  • Use a hand mixer and beat the butter and sugar until light and creamy. Add the cream cheese and vanilla essence and beat well. You should have a smooth frosting with no lumps.
  • Use a spoon and spread the frosting over slightly warm rolls

Notes

  1. The dough should feel a little tacky so don't add more flour, however it shouldn't stick to your hands like a gooey mess. If this does happen, wash your hands and rub a little oil on your hands.
  2. If you are using active yeast you will need to proof your yeast first. You can add the sugar and yeast to a bowl with a little bit of the warm milk and once it foams you can add the rest of the ingredients
  3. When using a baking dish to bake the buns ensure it has some space around it as it does rise a lot
  4. Your milk should be lukewarm, slightly warmer than your body temperature but not hot as it will kill the yeast
  5. You can make the dough the day before, cover with cling wrap and refrigerate. Take it out of the fridge an hour before and let it rest. Continue to prep and bake as per instructions above
  6. You can also make a sugar glaze instead of the cream cheese frosting. For that you will need 1 cup icing sugar, 1 tablespoon melted butter, 1 teaspoon vanilla essence and 1 tablespoon milk. Mix it all together until smooth
  7. I used dark brown sugar but light brown sugar is also fine
