Creamy Basil Mushrooms
These absolutely delicious Creamy Basil Mushrooms are supposedly breakfast mushrooms but you can serve it however you wish. My hubby has been raving about these mushrooms he used to eat often at a restaurant.
Before Covid19, when he entertained a lot more. Now he has to stay put so I am his private chef that needs to make restaurant quality food…haha, he can dream!
Absolutely Delicious Creamy Basil Mushrooms
Seeing he’s been asking forever I thought I should get down to creating a little recipe of my own. He says it is the best thing I have cooked for him since we got married.
Something is seriously wrong there because I think I have cooked him a lot of delicious food. But I guess I will have to take that…Lol!
It worked perfectly for a quick Brunch. The basil added a lovely freshness to the mushrooms and I added a hint of lemon.
It was divine. It is also such an easy meal to put together. You will thank me for it.
Ingredients Required
For these Creamy Basil Mushrooms I used white mushrooms, you can use brown if you prefer. Butter, Onion, Garlic, Fresh Basil, Dried Italian Herbs, Fresh Cream and Lemon juice.
Cooking the mushrooms
After sauteeing the onion and garlic you have to fry the mushrooms on high heat. You don’t want your mushrooms to stew, they should be slightly caramelised.
I added my basil whilst frying my mushroom as I wanted some of that flavor to infuse right into the sauce. After adding the cream I added a little more fresh basil.
These mushrooms are made with cream, not milk and flour like you make a proper mushroom sauce. Therefore the sauce won’t be as thick.
Serving the mushrooms
We had it on toast with some grilled halloumi on the side. You can have it with poached eggs for breakfast or you can have it on pasta for dinner or lunch too. Either way it will be great.
I used 250g of mushroom which was enough for my hubby and I on 2 large pieces of toast. The recipe can be easily doubled if you’re cooking for more than 2 people.

Creamy Basil Mushrooms
Ingredients
- 250 gram white or brown mushroom sliced
- 2 tbsp butter
- 1 small onion finely chopped
- 2 large cloves garlic minced
- 1/2 tsp dried italian herbs
- 1/3 cup fresh basil chopped
- 1/2 cup fresh cream
- 1 tbsp grated parmesan
- 1 tbsp lemon juice
- salt
- pepper
Instructions
- Heat the butter in a large pan. Add the onion and saute until translucent. Add the minced garlic and fry for a minute
- Add the mushroom, dried italian herbs and the chopped basil. Fry until the mushrooms are slightly caramelized
- Add the cream. Season with salt and pepper. Simmer for a minute, add the parmesan and drizzle the lemon juice over
- Serve hot, garnish with more fresh basil and more parmesan
Notes
- This recipe can be served with pasta, if it's for a family you can double the recipe
- Will be great with any protein too
- You can adjust the quantity of the lemon juice according to your taste
