Simple Tomato Pasta Sauce
Finally I get to sit down for a few minutes and share my Simple Tomato Pasta Sauce recipe. It’s been a very hectic and emotionally draining couple of weeks. We are all human and so am I. I am allowed to hurt and feel down at times. But I am also the kind of person that gets up and gets going regardless of how I feel. It’s what you do when you have kids, you put on a smile and carry on.
If I ever don’t feel good I feel the energy change, instantly, in our home. If a mum’s not happy nobody is happy. It’s why no matter how depressed I am about things,that sometimes happen in my life, for the sake of my family I realise I have to pull myself together.So many people have told me “you have so much to be grateful for”, so why do you upset yourself.
No matter how much of material stuff one can have we are still human and we are allowed to be hurt and to be sad. That doesn’t mean I am ungrateful. I am a very sensitive person that just loves too much and wants to be “accepted” and loved. At times I think I am far too sensitive, often to my own detriment. But it’s the way I’m made up.
I wish I could be one of those people that just doesn’t give a damn about others and carries on with life. I have also come to the conclusion that I am a very misunderstood person. Not everyone gets me. Hopefully someday they will!Anyway enough of my ranting, let me get on with my recipe.
My kids absolutely love this sauce. It is one of the most simple things to cook and yet it goes down a treat. I never have leftovers when I make this. Somedays even I don’t get to eat any of it. I have made it in a while and I think they forgot all about this recipe. My 11-year-old said “Mum this is divine”. Amazing how just a few simple ingredients can make an amazing meal.
I sometimes add some cut up soya hotdogs to this Simple Tomato Pasta Sauce, if it’s a meat-free day. You can also add chicken or mushroom to it. It tastes delicious either way. I had a taste of it too and I had forgotten just how delicious this sauce is.
I use dried herbs in this sauce and my favourite brand of herbs is Robertsons. Maybe my taste buds are just used to their dried herbs. I’ve tried loads of others but I always go back to my favourite brand.
You can also make this sauce ahead and freeze it. It does freeze well. It’s always great to have some sauce in the freezer for those emergencies. I remember when I worked in corporate and I started dinner late, I had my kids nagging me for food in the evenings. They couldn’t wait so some frozen sauce would have definitely come in handy. Thank goodness I don’t have those days anymore.

Creamy Chilli and Garlic Prawn Pasta

Pasta Tomato Sauce
Ingredients
- 2x400 gram canned Italian Tomatoes blended
- 1/4 cup extra virgin olive oil
- 1 medium onion finely chopped
- 2 large cloves garlic grated
- 2 green chillies finely chopped
- 2 tsp dried Italian Herbs
- pinch of chilli flakes
- 2 tsp sugar
- salt
- fresh Basil (optional)
Instructions
- Add the olive oil and onion to a medium saucepan and sauté on a low heat until the onions are translucent
- Add the chilli and garlic and cook for a minute
- Mix in the dried herbs
- Add the blended tomatoes
- Season with salt and add the sugar. Sprinkle in the chilli flakes
- Simmer on a low heat for 30-45 minutes until sauce reduces and tomatoes are cooked. Oil will surface to the top when ready
- Serve with your favourite pasta. Garnish with some fresh basil
