Green Bean Curry with Coconut Milk

Green Bean Curry has always been a popular dish in our home, except that we never cooked it with any sort of cream or milk. This Green Bean Curry with Coconut Milk is a first for me but it was amazing.

Green Bean Curry with Coconut Milk

I have seen recipes for Green Bean curry with coconut milk, cooked the Sri Lankan way. I thought let me follow my usual recipe and just add coconut milk to it, I didn’t regret it.

Surprisingly this Green Bean Curry with Coconut Milk tasted divine, I was a bit sceptical about what it would taste like but I loved it. Will definitely be cooking this dish again.

We do cut up our green bean a little differently when using it in a curry. It is sliced thinly and sort of diagonally, I think the reason for this was for quick cooking time.

Not sure if there’s another reason but it’s how my mum did it and it works well.

You can serve this Green Bean Curry With Coconut Milk with some Basmati rice or roti. I personally prefer it with roti, almost all veggie curries taste delicious with roti.

This dish is an easy dish to cook and only takes 30 minutes. The only difficult thing is cutting up the green beans.

I must admit I am not a fan of cutting up vegetable. I do it because I am forced to…Lol!

Sometimes depending on my mood it can be therapeutic. Otherwise it feels like a tedious task. So if you are like me get someone else to cut up the veggies…haha!

Cooking the Green Beans

It is always nice when veggies have a slight crispness to it. If you prefer soft vegetable then go for it.

However, I find Green Beans shouldn’t be overcooked but not undercooked either. Another plus with this dish is that you do not require too many spices.

As I always maintain you don’t always need tons of different spices to cook a delicious curry. Some dishes need minimal spice and still tastes great.

My mum-in-law is one of those cooks that never uses a whole lot of different spices and yet her food is always super delicious. Did I say LOVE is the key to cooking a tasty dish?

You better believe it is. If your food is cooked with love it will taste amazing everytime.

I hope you enjoy this curry as much as we do. If you do try it please drop me a comment and a star rating. It is always appreciated.
