Easy Chocolate Brownies
You don’t want to know how many attempts I’ve had at getting these brownies perfect.
There are loads of recipes on the internet and although most look great, I thought it needed to be a little thicker.
At least it’s the way I prefer to make them. The recipe that I used previously was great but I think this one is better.
This Easy Chocolate Brownies Recipe is definitely a keeper. It’s all made in one bowl, yes you heard right!
If you are anything like me and hate washing dishes then this recipe is right up your alley.
The texture is somewhere between a cake and a brownie with a crackly top. Just the way I love them.
However, the good news is that you can adjust the baking time to suit your taste. You can have it as gooey as you want or more cake like, the way I love them.
The good news is that it is a forgiving recipe, so however, you make it I think it will work.
Like most bakes the key is to not over mix the batter, unless specifically requested in a recipe. Can a brownie have too much chocolate, I don’t think so.
I added some cocoa, chocolate chips and a slab of dark chocolate to make it extra chocolatey.
Brownies are also not meant to be baked until a toothpick comes out clean.
It has to be baked and removed just before it’s fully cooked. This is where you get that gooey texture.
These Brownies can be whipped up in just a few minutes and I promise it will be eaten just as quick…Lol!
📝 What do we need to make these Brownies
If you have been following me for a while you will know I always prefer using ingredients found in your pantry.
A few simple ingredients is required for this recipe.
Eggs, Brown Sugar, Vanilla Essence, Chocolate Chips, Chocolate Bar, Cocoa, Flour
I have used white sugar in the past and it was fine. Lacked the chewiness but it still tasted great.
Sometimes you don’t want a perfect scientifically proven bake, you just want a treat that tastes good.
Whilst I believe baking is a science remember our mothers in the good old days didn’t use science, only love. I want baking and cooking to be fun and not a tedious task.
Personally I think for a home cook some recipes are just too technical with far too much going on.
Unless I am looking to be a gourmet chef I really don’t have the time to read a whole essay before baking.

How to make Easy Chocolate Brownies
It is a simple process. I beat the eggs and sugar until light and airy.
The chocolate and butter was melted in the microwave, easy peasy. Stovetop is too much effort for me. It was then added to the egg mixture.
You then sprinkle the sifted flour and cocoa and beat it for a few seconds. Add the chopped up chocolate and it’s as easy as that.
Again remember never over mix the batter. I know you probably hear this often but it does ring true for most recipes.
I baked my brownies for 35 minutes as I wanted a more cake like texture.
If you want a more gooey, fudge like texture then I suggest you bake the brownies for about 30-32 minutes.
You can use your discretion here depending on your oven.

Easy Chocolate Brownies
Ingredients
- 175 gram butter salted
- 1/2 cup chocolate chips
- 4 large eggs room temperature
- 1 cup light brown sugar
- 2 teaspoon vanilla essence
- 3/4 cup cake flour sifted
- 2 tablespoon cocoa sifted
- 150 grams good quality dark chocolate chopped
Instructions
- Preheat oven to 180 degrees Celsius
- Lightly grease a 23 x 23cm square baking pan and line with parchment paper, you will need the paper slighly overlapping the pan for easy removal
- Place the chocolate chips and butter in a microwave safe bowl and melt for 50 seconds or more if required. Set aside
- Place the eggs, vanilla essence and sugar in a bowl and using an electric mixer beat until it doubles in volume, for about 3 minutes, on a medium speed
- Slowly drizzle in the chocolate mixture and keep beating until everything is incorporated, about 10 seconds
- Sprinkle the sifted flour on top and beat for another 8 seconds. Add the chopped chocolate and use a spatula and give it a quick mix
- Pour the batter into the prepared pan. Bake for 30-35 minutes until it's just set. If a toothpick is inserted it should come out a little dirty. It will continue cooking in the hot pan once it is out of the oven.
- Remove and cool in the pan until it reaches room temperature, about 30 minutes . Cut into 16 pieces.
Notes
- You can adjust the time in the oven, depending on the texture you prefer. I wanted a cake like texture brownie so I baked it for 35 minutes. You can try 30 minutes if you want it more gooey, fudge like texture
- You can increase the amount of cocoa powder with an extra two tablespoons if you wish to omit the slab of chocolate.
