I’ve had a rather stressful few days and I am so glad that I cook. For me cooking is therapeutic and it helps with my stress levels.
My days are sometimes quite hectic, stay-at-home mums also have a million things to do. However, my little boy has been asking me to make him tacos forever now.
Today I felt a little guilty about not making them so I eventually got around to making it. Seeing I was making Salmon for my hubby and I, I thought the Easy Avocado Salsa could work for everyone.
This Easy Avocado Salsa is so delicious, I could eat it all on it’s own. I didn’t have any fresh jalapenos and I couldn’t find any at the store today so I used pickled ones, I thought it was still delicious.
You can use Chilli if you prefer. Salsa is very similar to the Indian Sambal we make, except we use chilli and we add lemon juice instead of lime.
Avocado Salsa is so refreshing, especially in Summer. I know we are experiencing freezing weather these last few days but I needed something healthy. You can only do so much carbs and spicy. I also feel better when I eat light.
It’s amazing how quickly everything was put together. This morning I wasn’t in the mood to do this whole Taco thing with the “millions” of condiments.
But I actually enjoyed cooking the mince meat and making the sour cream sauce and the Avocado Salsa. Surprisingly it didn’t take much time at all.
If you want a healthy, refreshing meal you’ve got to try this Avocado Salsa. No doubt you will love it!
Easy Avocado Salsa
- 1 Avocado cut into cubes
- 2 tomatoes chopped
- 1 red onion finely diced
- 1 jalapeno chopped ( I used pickled jalapenos)
- 1 tbsp coriander/dhania finely chopped
- 2 tbsp lime juice
- Salt to taste
- In a medium bowl, combine the tomatoes, jalapeno and lime. You can store this in the fridge if you not serving immediately
- When ready to serve add the chopped avocado and coriander and season with salt. Serve Immediately
