Bombay Crush
I remember growing up my mum always made us Bombay Crush during Diwali. We looked forward to that thick rose flavored milk shape with loads of vanilla ice-cream, totally yum!
This year I thought I will keep up with the tradition and make some for my kids. I don’t make it too often, maybe a few times in their lives. They were so chuffed when they saw it in the refrigerator, especially my older son. He could live on anything sweet all day, if he had his way.
Luckily my 12-year-old is only crazy about chocolates, nothing else that’s sweet really appeals to him. I think he is the only child on the planet that says no to cakes and sweets at school, can you believe it. At least I know his teeth will last until he’s a 100 years old…Lol!
What Ingredients goes into a Bombay Crush
Firstly you do need milk, it is a milkshake after all. You can use rose syrup or elachie (cardamom) syrup.
Sabja seeds are then added to it, after being soaked in some water for a few minutes. This is also know as basil seeds, they are black in color and look a lot like Chia seeds but it is not the same
Rose water, this milkshake has a rose flavor so if you’re not using rose syrup then rose water will add that flavor to it.
China Grass, this is the same as Agar Agar. Some people add this to their Bombay Crush, however I don’t like it because I am not a fan of the texture. So I don’t add any to my Bombay Crush. Feel free to add some to yours if you wish.
Ice-Cream, you have to mix in loads of ice-cream to give that rich, delicious creaminess.
How to make it
I literally pop everything into a large jug and mix it all together. The Sabja seeds are soaked, drained and added to the Bombay Crush. You can top it up with more ice-cream or you can add some whipped cream if you prefer.

Bombay Crush
Ingredients
- 1 litre full cream milk
- 1/4 cup elachie syrup
- 3 tbsp rose water
- 8 scoops vanilla ice-cream
- 2-3 tbsp sabja seeds
Instructions
- Soak the sabja seeds in a cup of water for 1o minutes. Drain and set aside
- In a large jug, mix the milk and the ice-cream. Add in the elachie syrup and rose water, mix well. Mix in the sabja seeds and serve with a dollop of ice-cream or whipped cream
Notes
- You can add more ice-cream to the Bombay Crush if you wish, you can never have enough ice-cream
- If you wish you can use rose syrup instead of elachie syrup and add some cardamom powder
- I added 2 tbsp sabja seeds because my kids don't like a whole lot of it but you can add an extra tablespoon if you prefer
- Rose syrup and Sabja seeds can be found in the Indian spice shops
