We have one person in our home that’s a huge chocolate fan or should I say addict…haha!

My hubby cannot resist chocolate or most sweet things I would say. 

He’s been asking me why haven’t I been baking of late.  I haven’t been motivated to bake and that’s the only reason.

Of course today I wanted to surprise him so I baked this Chocolate Fudge Loaf.

I simply love baking this cake as it’s one of the easiest and most forgiving.

There are tons of recipes I want to share and I promise I will do more baking recipes.

Today may be the start as I was up early and I did some chores and got baking. It felt good…

I do love baking but what I don’t like is a recipe with one million steps. No, absolutely NO.

It’s why I am drawn to simple stuff like loaves and cakes that are made in one bowl.

And did I tell you I’ve made this a few times and it never flops.

Ok, the one time it did. No I lie, it didn’t actually flop. I used the incorrect loaf pan, it was too small and the cake was almost out the pan when it started to rise.

Of course when I tried removing it, the cake literally broke into pieces.

So be sure to use the correct size loaf pan. I cannot tell you the exact size pan I have used. 

It’s a really old pan and I honestly cannot figure what size it is.

When pouring the batter into the pan it should fill the pan only half way.

Ingredients Required 

  • Good quality dark chocolate – it is a chocolate fudge loaf so chocolate is the star ingredient
  • Butter – I always use salted butter in my baking and therefore I never add extra salt
  • Coffee – because it enhances the flavour of the chocolate
  • Buttermilk – this is what makes the cake really moist

The other ingredients are basic ingredients.

  • Hot water
  • Brown Sugar
  • Cake Flour
  • Bicarbonate of Soda
  • Baking Powder
  • Cocoa
  • Buttermilk
  • Eggs

Ingredients
  

  • 150 gram butter
  • 150 gram chocolate
  • 1 teaspoon coffee granules
  • 1/2 cup hot water
  • 1 cup brown sugar
  • 2 large eggs room temperature
  • 2 tablespoon cocoa powder
  • 1&1/2 cup cake flour
  • 1/4 teaspoon bicarbonate of soda
  • 1/2 teaspoon baking powder
  • 1/2 cup buttermilk

Chocolate Ganache

  • 1 cup chocolate chips
  • 1/2 cup fresh cream

Instructions
 

  • Preheat the oven to 180 degrees Celsius. Grease a loaf pan and line the bottom of the pan, leaving some baking paper overlapping the sides of the pan for easy removal
  • Place the chocolate and butter in a microwave safe bowl and heat for 50 seconds, or a little longer, just until the chocolate starts to melt. Remove from the microwave and mix with a whisk, until smooth
  • Mix the coffee with the hot water and add to the bowl. Add the sugar and mix well, still using the whisk
  • Add the eggs, one at a time and whisk.
  • Sift in the cocoa and mix. Sift in the remaining dry ingredients and slowly add the buttermilk. Do not overmix
  • Pour the batter into the line pan and bake in the oven for 50 minutes or until a toothpick inserted comes out clean
  • Allow the cake to stand for 10 minutes. Remove gently from the pan and allow it to cool on a wire rack. Once cooled completely spread the chocolate ganache on top

Chocolate Ganache

  • Heat the fresh cream in a saucepan, on the stovetop just until it's hot. Do not let it come to a boil
  • Place the chocolate chips in a microwave safe bowl and pour the hot cream over. Place in the microwave for 30 seconds, remove and whisk well until smooth
  • Allow the ganache to stand for 20 minutes, it will thicken. You can use this to decorate the loaf.

Notes

  1. I have used Bournville dark chocolate in my cake batter and I used chocolate chips for the ganache. They both worked well. The experts do not recommend eating chocolate for ganache but rather baking chocolate. Eating chocolate apparently gets grainy and doesn't allow a smooth ganache. I have used the chocolate chips and it worked fine.
  2. I wouldn't recommend substituting the buttermilk but if you must then you can use some yogurt but add some water to it so it's not too thick.
