Spicy Tomato Lamb Pasta
This is another dish, Spicy Tomato Lamb Pasta, that my kids absolutely love. I have been cooking this Lamb Pasta like forever. Yet it’s still remains a favorite with my kids.
Spicy Tomato Lamb Pasta
My kids don’t eat much red meat but they do love a good Lamb Curry or a Lamb Pasta. When I had all 3 boys at home I used to cook it more often.
Now that I just have the little one at home he only gets to enjoy these dishes when my 18-year-old is home. It’s just not worth making a big dish for just one tiny person.
Yesterday we had a meeting at my son’s college so I wanted to cook him something to take with. He requested this Spicy Tomato Lamb Pasta. It’s made with just a few ingredients.
I add a little bit of cheese, I say little because my kids really don’t enjoy cheese in their pasta. Who doesn’t love cheese…..crazy kids!
When I ate lamb it was something I loved making when I needed a bowl of comfort. The bonus is that it has some Indian flavor so makes it a little spicy too.
I think this dish can freeze well, only I don’t freeze much. I grew up in a home where everything was freshly cooked. We never had frozen meals ever.
Somedays I think I should actually try cooking huge batches of food and pop them in the freezer. Life would be so much easier but I just couldn’t.
Ingredients Required
If you have been on my blog long enough you would know I am an absolute fan of passata. I could use it in all my tomato dishes if I could.
Passata is just one of those convenient ways of using tomatoes. It is also not too acidic like some canned tomatoes.
If you’ve never heard of passata before, it is basically an Italian tomato sauce. It is made from strained tomatoes and used in Italian cooking.
Passata is a smooth sauce and works amazingly well for tomato based sauces. I am so glad that it works for non-Italian dishes too. I seriously can’t live without it.
Some brands will say tomato passata on the bottle and other brands call it tomato puree. It is always in a bottle. Please do not confuse it with the tomato puree in the can.
Living in Johannesburg has taught me to make do with whatever ingredients I can find in the stores. In Durban we could get fresh tomatoes in every corner.
In Johannesburg I sometimes struggle to get even one bag of decent tomatoes. When I do find some they cost a packet.
Besides the passata, you also need some lamb mince, onion, italian dried herbs, oregano, ginger/garlic paste, chilli powder, white sauce and pasta. The cheese is optional although it does add more yumminess to the pasta.

Spicy Tomato Lamb Pasta
Ingredients
- 500 gram lamb mince
- 1 onion finely chopped
- 1 bay leaf
- 3 sprigs thyme
- 1 tspn ginger/garlic paste
- 1&1/2 tspn dried italian herbs
- 1 tspn oregano
- 2 tspn chilli powder
- 1 cup passata or pureed tomatoes
- 1/2 cup water
- 2 cups dried pasta
- salt
- pepper
- 1 cup grated cheese cheddar or mozzarella
White Sauce
- 1 tbsp butter
- 1 tbsp cake wheat flour
- 1 cup warm milk
- salt
- pepper
Instructions
- Heat a large pan on high heat and brown the mince
- Turn the temperature down to a medium low heat and add the onions, bay leaf and thyme
- Once the onion is translucent add the ginger/garlic paste and sauté for a minute
- Add the italian herbs, chilli powder, oregano and cook for a few seconds
- Add the tomato passata and half cup water. Season with salt and pepper. Simmer on a low heat for 30-45 minutes to an hour. The sauce will thicken and the oil will surface to the top when fully cooked
- Boil the pasta as per package instructions. Drain and set aside, reserving a cup of the water
White Sauce
- Melt the butter on a low heat. Add the flour and whisk until it's smooth
- Gradually whisk in the milk
- Allow it to simmer gently until the sauce starts to thicken, about 6-8 minutes. Season with salt and pepper
Spicy Tomato Lamb Pasta
- Mix the white sauce, meat sauce and pasta together. You can add some of the pasta water to the dish or you can mix it in during serving time.
- Mix in the cheese or you can sprinkle the cheese on top and pop under the grill function in the oven until it melts
- Garnish with parsley
Notes
- You can use fresh tomatoes or canned tomatoes if you do not have passata
- More cheese can be added to the dish if you love cheese
- The lamb mince can also be substituted with a mince of your choice
