Best Chilli Cheese Toast
If you thought a grilled cheese sandwich couldn’t get any better, think again. This is the Best Chilli Cheese Toast and it beats any cheese sandwich you’ve ever had.
Chilli Cheese Toast
Although it’s supposed to be an appetiser or snack, in my books you can eat it for breakfast, lunch or dinner because it’s that good.
Pop some salad or some some fried chips on the side and you have a whole meal.
It’s also super quick and easy to make. I think you may have all the ingredients you need at hand too.
I made it for my hubby and I was a little skeptical as he is the fussiest eater on this planet.
However, he simply loved it and I think he will eat it any time of the day without a complaint.
Ingredients Required
For this recipe you will need some cheddar cheese, mozarella cheese, cream cheese, butter, green pepper, onion, coriander, chillies and a couple of spices.
You can also use bread of your choice although I prefer sour dough bread. Any sandwich bread will work.
For this recipe I don’t suggest very thick slices of bread as you do want the bread to crisp up nicely.
Cream cheese can be left out of this recipe, but trust me it’s needed. It gives this sandwich that extra yumminess.
I used mozarella, however it does not have any flavour and therefore I love combining it with cheddar.
Mozarella does give your sandwich that beautiful cheese pull so yes we need it.
You can use other cheese too, any melty cheese will work and you can also use gruyere.
How to make it
You can pop it in the oven or you can make it in a pan on the stovetop.
The oven does a better job in my opinion, it makes it a little more crisp and the cheese will be a little more golden and bubbly than the stovetop version.
This recipe is one of those versatile recipes so you can add corn, different coloured peppers, paneer and substitute the cheese if you wish.
I know at my age I should be seriously watching what I eat but who can resist a good sandwich with loads of cheese…certainly not me:-)
Oh, this is an open sandwich by the way. You can add another layer of bread on top I guess but I won’t suggest it.
Let’s just say it works better as an open sandwich, trust me on this!

Best Chilli Cheese Toast
Ingredients
- 4 slices sour dough bread
- butter for spreading
- 4 tablespoon cream cheese
- 1 cup mozarella cheese grated
- 1 cup cheddar cheese grated
- 1/4 green pepper diced
- 1/2 small red onion diced
- 1 small spring onion chopped
- 1 green chillie chopped
- 1/4 cup fresh coriander chopped
- 3 tablespoon mayonnaise
- 1/4 teaspoon chaat masala
- 1/4 teaspoon chilli powder
- tomato sauce or chilli sauce for serving
Instructions
- Preheat oven using the grill/broil function
- Spread some butter on both sides of the bread. Heat a pan on the stovetop, on medium heat and toast the bread on both sides,just until it turns slightly brown.
- Remove from the bread from the pan and spread 1 tablespoon of cream cheese on top of each slice of bread
- In a bowl, mix all of the remaining ingredients together, except the tomato sauce or chilli sauce (if using)
- Spread the mixture equally on top of each slice of bread.
- Place it in the oven and grill for 5 minutes or until the top is golden brown and bubbly
- Serve hot with a drizzle of tomato sauce or chilli sauce
Notes
- If you wish to make this sandwich on the stovetop. You can place it in a heated pan (last step) and cover it with a lid. This will allow the cheese to melt. Once the cheese is melted you can remove from the pan and serve.
- There are loads of vegan/vegetarian mayonnaise on the market that can be used for this recipe if you are strictly vegetarian.
- I am obsessed with the Woolies Bombay ketchup and it's what I used to drizzle on top of the toast, however you can use a chilli sauce or normal tomato sauce
- 4. If you do not have chaat masala feel free to omit it. It is sold in most spice stores and that's where I get mine from.
