Chicken never looked so good! When your 14-year-old bugs you for fried chicken for a week and you eventually give in. If only I was 14 again!
I had no intention of posting this recipe but my son said it was the best thing ever so I just had to:-)

I used the recipe from Carls Bad Cravings but I did adjust the recipe according to my own taste

Nashville Hot Chicken
6 pieces of chicken
Steam for 7 minutes in some hot water. Remove and pat dry with paper towels
Vegetable oil for deep frying

Egg Wash
1 egg
1/2 cup buttermilk
2 tbsp hot sauce

Flour Breading
1/2 cup cake flour
1 teaspoon baking powder

Spice Mix
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1 tsp paprika
1 tsp cayenne pepper
2 tsp chilli powder
1 tsp oregano
1/2 tsp parsley
1/2 tsp salt

Remove 1 teaspoon of spice mix for the sauce

Sauce
1&1/2 tbsp butter
1 tsp spice mix
2 tbsp hot sauce
1 tsp brown sugar
1/2 tsp cayenne pepper
Few drops of vegetable oil
Heat on stove top until butter melts

Steam the chicken for 7 minutes in some hot water (optional, you can omit this step). Remove, pat dry and set aside
Mix all of the ingredients for the flour breading, including the spice mix minus the 1 teaspoon and set aside
Mix the egg wash mixture and set aside

Dip the chicken in the flour mixture. Dust of excess. Dip in egg wash. Dip again in the flour mixture and dust off excess. Deep fry on hot oil on medium to low heat until golden brown and crisp. Do not cook it too quick or the insides won’t be cooked. Once cooked drain on paper towels.

Heat the ingredients for the sauce and pour over the chicken.

Looking for a quick and healthy lunch you’ve got to try this.

I made some for my hubby and I. Made only one for myself but I really wanted more, it was that delicious.

And this is how you make it:

Drizzle some olive oil on the bread or a very light spread of butter. Toast the bread in a pan. Fry the tomatoes and pitted olives in some olive oil with salt and pepper. Set aside. Spread some pesto on the bread. Top up with some low fat cottage cheese. Pop the tomatoes and olives on top. Sprinkle some chopped basil on top. Drizzle some balsamic glaze on top ( I didn’t have any so used a little balsamic vinegar)

p.s don’t mind my sloppy reel. It was made in a rush

I changed my recipe just a little and i love how they turned out

A few tips. Never ever add all of the flour at once when baking cookies. The moisture content differs at times due to weather so sometimes you need more and other times less.
To be able to pipe cookies the dough has to be perfect consistency. Very soft but not sticky
When piping press the piping bag with thumb and forefinger on the nozzle and push the dough from the top. Easier to pipe away from you for these elongated shapes rather than towards you (if that makes sense)
Do not melt the chocolate until it’s a liquid. Place in the microwave for 30 seconds and thereafter 10 secs at a time if needed. Choc should still look whole when removed but as you mix it, will be soft and melt further.
Melting Moments
250g butter
1/2 cup icing sugar
2/3 cup custard powder
1&1/2 to 2 cups cake flour
150g chocolate for decorating
Method
Beat butter until light and creamy. Mix in the sugar until well combined. Mix in the custard powder. Add flour little at a time until you form a very soft, but not sticky dough. Pipe into shapes, bake at 160 degrees Celsius for 15-20 mins or until slightly brown on the edges. Allow to cool and decorate. Pop in the fridge to allow chocolate to dry quicker

Ingredients
300 gram paneer cut into cubes
2 tbsp vegetable oil
2-3 tablespoon butter
4 green elachie
4 cloves
1 large red onion thinly sliced
2 tsp ginger garlic paste
2 green chillies
3 large roma tomatoes
10 cashew nuts
1/2 cup vegetable stock
2 tspn kashmiri chilli powder
1/2 tsp turmeric
1 tsp coriander powder
1&1/2 tsp cumin powder
1 tsp garam masala
1/4 cup fresh cream
1&1/2 tsp dried methi leaves
2-3 tsp sugar if required
salt
