Easy Chicken Souvlaki

- 4 chicken breasts about 700 gram
- 4 teaspoon dried oreganum
- 1/2 teaspoon dried thyme
- 1 teaspoon paprika
- 4 large garlic cloves minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2+ 3 tablespoon olive oil
- 1 lemon
- 1 red pepper cut into cubes
- 1 red onion cut into cubes
- 6 wooden or metal skewers
Tzatziki
- 1 cup greek yogurt
- 1 cup grated cucumber
- 1 garlic clove
- 1 tablespoon chopped dill
- 2 teaspoon white vinegar
- 1&1/2 tbsp extra virgin olive oil
- 1/2 tsp salt
If using wooden skewers soak them in water for about 15 minutes
Cut the chicken breasts into cubes. Marinate them with the oregano, thyme, paprika, garlic, salt and pepper. Squeeze the lemon juice into the chicken and mix well. Mix in the olive oil. Refrigerate for 1 hour
Thread the chicken with the cubes of pepper and onion into the skewers
Heat a pan on high heat and fry the skewers for about 6 minutes on each side, turning occasionally. You can check if they're cooked after 10 minutes and if not cook for another 2 minutes
Serve with pita bread and Tzatziki
Tzatziki
Grate the cucumber and squeeze all the excess liquid using a clean kitchen towel or paper towels
In a bowl add the yogurt, garlic, dill, white vinegar and salt. Mix it all together and add the cucumber
Refrigerate until ready to serve. Drizzle the olive oil before serving
- I used one small Mediterranean cucumber for the Tzatziki. If using a large cucumber you may need about a quarter
- Greek yogurt is not easily found in supermarkets but in speciality stores, you can use the full fat yogurt
