Light Fluffy Waffles

These waffles are so good you may want to double the recipe

  • 3/4 cup cake wheat or all purpose flour
  • 1/4 cup cornflour
  • 1 teaspoon baking powder
  • 2 tablespoon granulated sugar
  • 1 large egg
  • 1/4 cup vegetable or canola oil
  • 1 cup milk
  • 1 teaspoon vanilla essence


  • Preheat your waffle iron
  • Mix all the dry ingredients, flour, sugar, baking powder and cornflour together in a large bowl
  • Seperate the egg white from the egg yolk and whisk the egg white until stiff peaks form. Set aside
  • In a separate bowl mix the milk, oil, vanilla essence and egg yolk
  • Add the wet ingredients to the dry ingredients and whisk. Do not overman
  • Fold in the egg white.
  • Pour the batter in the hot waffle iron, about half a cup. This will depend on the waffle maker you have
  • Allow it to cook for 5 minutes. You can use your discretion here depending on the waffle maker you have
  • Serve hot with your favourite toppings


  1. I used a little less than half cup of batter to make my waffles. You may require a little more or less depending on your waffle maker
  2. You should get 6 normal sized waffles from this batter, however I used a waffle stick maker so I got 24 sticks
  3. This recipe can be doubled
