Salted Brownie Cookies

- 125 gram/1/2 cup butter
- 1/4 cup cocoa powder
- 1/4 cup granulated white sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla essence
- 3/4 cup cake wheat or all purpose flour
- 1/2 tsp bicarbonate of soda
- 1/2 cup chocolate chips
- salt flakes (optional)
Preheat oven to 160 degrees Celsius. Line 2 baking sheets with baking paper and set aside
Melt the butter in a saucepan on low heat. Whisk in the cocoa and set aside
Mix the flour,bicarbonate of soda and salt (if using) and set aside
Beat the sugar and eggs together for 4 minutes. Mix in the vanilla essence
Add the dry ingredients together with the chocolate chips and mix until just combined
Drop spoonfuls of cookied dough onto the baking sheets. You can use your hands to make them a little round. Sprinkle each cookie dough ball with salt flakes and bake at 160 degrees Celsius for 10-12 minutes. Cookies will still be soft when removed from the oven
Cool on a wire rack
- You can find salt flakes at Woolworths or speciality stores
- A little scoop, maybe a watermelon scoop, not an ice-cream scoop can be used to scoop the cookie dough. That way you won't over handle the dough and still get round cookies
