Salted Brownie Cookies

  • 125 gram/1/2 cup butter
  • 1/4 cup cocoa powder
  • 1/4 cup granulated white sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla essence
  • 3/4 cup cake wheat or all purpose flour
  • 1/2 tsp bicarbonate of soda
  • 1/2 cup chocolate chips
  • salt flakes (optional)


  • Preheat oven to 160 degrees Celsius. Line 2 baking sheets with baking paper and set aside
  • Melt the butter in a saucepan on low heat. Whisk in the cocoa and set aside
  • Mix the flour,bicarbonate of soda and salt (if using) and set aside
  • Beat the sugar and eggs together for 4 minutes. Mix in the vanilla essence
  • Add the dry ingredients together with the chocolate chips and mix until just combined
  • Drop spoonfuls of cookied dough onto the baking sheets. You can use your hands to make them a little round. Sprinkle each cookie dough ball with salt flakes and bake at 160 degrees Celsius for 10-12 minutes. Cookies will still be soft when removed from the oven
  • Cool on a wire rack


  1. You can find salt flakes at Woolworths or speciality stores
  2. A little scoop, maybe a watermelon scoop, not an ice-cream scoop can be used to scoop the cookie dough. That way you won't over handle the dough and still get round cookies
