One Pot Lamb and Rice

A very simple but delicious dish all made in one pot with just a few ingredients

  • 500 gram lamb mince
  • 1 onion finely chopped
  • 2 bay leaf
  • 1 x 5cm cinnamon stick
  • 1 tsp ginger/garlic paste
  • 2 tsp chilli powder
  • 1 tsp ground cumin
  • 1/2 tsp ground fennel
  • 2 tbsp tomato paste
  • 2 cups vegetable stock
  • 1 cup water (only if required)
  • 1/2 red pepper thinly sliced
  • 1/2 cup sweetcorn
  • 3 cups baby spinach
  • 1 cup long grain rice
  • salt
  • 1/4 tsp pepper


  • Place the lamb mince in a large pan together with the bay leaf and cinnamon stick. Allow the mince to brown on medium to high heat
  • Add the onion and fry until translucent. Add the ginger/garlic paste and fry for a minute
  • Mix in the cumin, fennel and chilli powder,red pepper and sweetcorn. Allow to fry for 5 minutes on a low heat
  • Mix in the tomato paste and rice and cook for a minute. Add the vegetable stock. Season with pepper and salt, only if required
  • Cover and allow it to simmer for 20 minutes or until the rice is tender and the liquid has reduced. In between cooking, if your rice is not fully cooked and the liquid dries up add the cup of water or as much as you require. In the last 2 minutes of cooking time add the spinach and allow it to wilt
  • Garnish with some coriander or parsley and serve hot


  1. Some supermarkets do sell a lamb stock so you can use that instead of the vegetable stock
  2. You can add other veggies, such as carrots and peas to the dish
  3. My recipes are tried at high altitude so I usually have a longer cooking time and I may therefore need more liquid. If you living at sea level then you may need to reduce the amount of liquid and adjust the cooking time
