  • 1 cup Brown Rice cooked as per package instructions
  • 2 pieces salmon weighing about 300g
  • 2 tbsp olive oil or chilli oil
  • 1 onion finely chopped
  • 3 spring onion chopped
  • 2 large cloves garlic smashed and chopped
  • 2 tspn cajun seasoning
  • 1/2 tspn paprika
  • 1 chilli (optional)
  • 1 egg
  • salt
  • pepper
  • lemon


  • Cut the salmon into small pieces. Rub in the Cajun seasoning and paprika and refrigerate
  • Add olive oil, onion and spring onion to a large pan and cook the onion until translucent
  • Add the garlic and cook for a minute
  • Add the salmon to one side of the pan and cook the salmon just until it browns a little, about a minute. Crack an egg on the other side of the pan and spread it a little, like an omelette. Turn it and cook the other side. Break it into little pieces
  • Mix in the rice and cook until everything heats through
  • Season with salt and pepper
  • Drizzle some lemon juice over and serve
