Brinjal with Garlic and Chilli

  • 700 gram baby brinjals each one cut into 4 pieces lengthwise
  • 1/4 cup light olive oil or vegetable oil
  • 1/2 tspn turmeric
  • 1 large onion thinly sliced
  • 6 large cloves garlic
  • 2 sprigs curry leaf
  • 6 green chillies slit in half
  • 2 small roma tomatoes skin removed and blended
  • salt


  • Wash the brinjals. Cut them in fours and soak them in some salted water
  • Heat the oil and fry the onion until translucent
  • Add the garlic, curry leaf and chillies and fry for a further minute
  • Mix in the turmeric
  • Add brinjals, season with salt. Lower the heat and allow the brinjals to cook. When slightly tender add the tomatoes and cook until tomatoes dissolve and brinjals are fully cooked
