I am trying to figure what recipes to post and what to save for that ongoing cookbook, it’s why I haven’t posted much on my blog.
Finally, I created a recipe just so I can drop by and also say Hello. I promise to try and post more recipes more regularly.

Who doesn’t love meals under 30 minutes? I am a sucker for quick and did I say easy meals.
I am not trying to be Nara Smith, if you watch TikTok you will know who I am talking about but I did make everything from scratch.
You don’t have to as there are loads of great tortillas in the stores.
Chicken Thighs or Chicken Breasts?
For this recipe I used chicken breasts because my fussy kids don’t like the “fattiness”of thighs.
Thighs is definitely more forgiving and there’s hardly a chance of over cooking them. These days everything is so convenient so you can find deboned thighs in the stores.
Some of the experts suggest a cast iron pan to brown your chicken and yes it works amazingly well. However, a non-stick pan works just as well.
My family loved this meal and I didn’t even have leftovers, which is rare in my home.
These are some topping suggestions for your Fajitas
- Guacamole
- Sour cream
- Salsa
- Pico De Gallo
- Cheese (if you can find a Mexican cheese use it or mozzarella or cheddar works perfectly fine)
I love spreading some cheese on top of the tortiilas and then fill it up and toast them. We love them a little crisp.
Straight form the pan onto your plate and you’re in heaven. I add some sour cream and avocados too.

Easy Chicken Fajitas
Ingredients
- 4 tablespoon olive oil
- 3 bell peppers (red, green, yellow), deseeded and sliced
- 1 large red onion halved and thickly sliced
- fresh coriander
- 8 small tortillas
Chicken marinade
- 600 gram chicken breasts halved horizontally and cut into strips
- 1 teaspoon crushed garlic
- 2 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon chilli flakes
- 1 teaspoon smoked paprika
- 1 teaspoon mexican seasoning see note 1
- 1 teaspoon oregano
- 1 lime
- 1 teaspoon black pepper
- 3/4 teaspoon salt
Toppings
- sour cream
- cheddar or mozzarella cheese see note 2
- 2 avocados
- jalapeno sauce
Instructions
- Place all of the marinade ingredients in a large bowl. Microwave the lime for 20 seconds and squeeze out the juice. Add the chicken to the marinade and mix to coat the chicken well.mix in the lime juice. Cover and refrigerate for 1 hour or overnight
- Heat 2 tablespoon olive oil in a large pan and fry the veggies. You may need to do this in 2 batches. Should take about 7 minutes with each batch. Remove from the pan and set aside
- Add 1 tablespoon oil to the same pan and fry half the chicken for about 5 minutes. Add another tablespoon of oil and fry the other half of the chicken
- Return the veggies to the pan and mix it well with the chicken. You can season with more salt if required
- Place some cheese on the tortilla, add the filling on top and toast on the pan. Top with avocado, drizzle some sour cream and jalapeño sauce and devour
Notes
- I used Mexican seasoning I found at Woolworths, however you can totally leave it out if you can't find some. The spices I used is all you need to make Fajitas. You can ad a bit more chilli powder/chilli flakes if you wish
- You can leave out the cheese should you prefer, not everyone adds cheese
