I had some bananas that were more ripe than I like them, so what better to make than this Super Easy Banana Bread. I’m really fussy about bananas, I cannot bear to eat overripe bananas, I love them when they are just about ripe and still firm. I often mention my picky eaters in my family but when I was younger I was just as picky, still am to some extent, so I really shouldn’t be complaining. You do become a little less picky with age, well at least I have. Baking is something I love but it must be easy…

I know I’ve been off the radar for far too long now, well that’s how long it takes incompetent people to fix up cupboards. What a trying couple of months it’s been, I think people have abused my kindness and it’s why what’s supposed to be a smooth transition into our new home has become a total disaster. No more “nice guy”, I think I’m going to have to practice how to be nasty from now on… I know a few of those so I think I will have to take some tips from them ….hahaha! One thing’s for sure…

Peppermint Crisp Tart is a popular dessert here in South Africa. I am quite certain than almost every cook/chef has some version of this dessert. We love it because it is such a simple dessert to make with just 4 ingredients, how much easier can it get. The other bonus is that you don’t have to bake it, pop everything into a dish and refrigerate it for a few hours. I usually make this Peppermint Tart in a rectangular dish and cut them up into squares when I’m ready to serve. You can also make them into little individual desserts….
