I remember my mum making this rustic One-Pan Sausage Casserole when I was a little girl. It was always so delicious, everything literally gets dumped into one pan. It is then cooked on a low heat until sausages are browned and the potatoes are soft and tender. You don’t need to fuss over it at all. Pop the lid on and walk away, when you get back your meal is ready.  I still make them for my kids every once in a while. They simply love it. You can use any sausage you prefer. Phew, this year has not started off with a bang like I thought it would. Everything that could go wrong has gone wrong. I am slowly picking up the pieces but it has depleted all of my energy. However, I am not a pessimist so I will pick myself up and become the optimist I am. If like me, you are having a tough start to the year, remember nothing is permanent. I thought all my efforts creating new school treats for my 11-year-old is going to be a waste. I am pleasantly surprised because everything I’ve packed for him has been eaten. Either that or he’s giving them all away to his friends. Not that I mind him sharing with them but it would be good to know that he also enjoys the lunch I pack.
