I don’t know how I missed this but whoever created this recipe is ingenious. This Indian-Style Bread Omelette is made in less than a minute. A sandwich made in one single pan. Heat a little butter in a pan. You whisk two eggs, add it to the pan and give it a swirl. I added some tomato, chilli, coriander and onion to my egg. You can add whatever you prefer. I always talk about how my mum made breakfast a big deal whilst I was growing up. Well this is one of my mum’s recipes, Spicy Indian Scrambled Eggs. I did tweak it a little but it used to be my dad’s favourite eggs.
