I always talk about how my mum made breakfast a big deal whilst I was growing up. Well this is one of my mum’s recipes, Spicy Indian Scrambled Eggs. I bought some strawberries a few days ago with the intention of making a cheesecake but I never got around to making them. Today I thought some Strawberry Muffins with Cinnamon Sugar will put them to good use, before they go all funny. When I think muffins I think a little more dense textured than cupcakes.  However today I didn’t feel like dense, I wanted something a little lighter. Breakfast in our home is mostly oats or fruit with yogurt and muesli. On the odd occasion when hubby is not in a rush to get out the house it will be eggs. Most weekends we are also on the move, we are out the house early so I don’t make fancy breakfasts.
