I remember my mum making this rustic One-Pan Sausage Casserole when I was a little girl. It was always so delicious, everything literally gets dumped into one pan. It is then cooked on a low heat until sausages are browned and the potatoes are soft and tender. You don’t need to fuss over it at all. Pop the lid on and walk away, when you get back your meal is ready.  I still make them for my kids every once in a while. They simply love it. You can use any sausage you prefer. But I have food on my table, a roof over my head, healthy kids and a wonderful husband.  There are so many people that are out there that don’t even know where their next plate of food will come from. I am more the muesli and yogurt kind of girl, it’s what I have almost everyday. Sometimes it will be a smoothie. But I do love quiche and these Easy Salmon Frittatas. They are made in the giant muffin pan so they not exactly mini thus the name…haha! The idea behind making these Easy Salmon Frittatas larger than usual was because I planned to serve them for dinner….
